Light and Fluffy Multigrain Pancake Mix

This is my most often requested recipe, from both guests and family and a great mix to keep on hand to have breakfast (or dinner) ready at a moments notice. These pancakes are so delicious, you won’t even know they are good for you! It took me a few tries tweaking different recipes to get the lightness not usually found in a multigrain pancake.

The Mix (store in an airtight container)

2 cups all purpose flour
2 cups whole wheat flour
1 cup quick cooking oats
½ cup cornmeal
½ cup brown sugar
2 tsp. salt
2 tsp. baking soda

The Pancakes

1 ½ cups of pancake mix
1 ½ cups buttermilk (may substitute part or all of buttermilk with plain yougurt)
1 large egg (we prefer eggs just brought in from the chicken coop!)
1 TBL oil

Whisk together dry pancake mix with wet ingredients with wet ingredients. Allow to “rest” for at least 5 minutes. Pour onto hot greased griddle, flipping when bubble start to form. Makes 12 small pancakes. Delicious with pure maple syrup or lovely and a bit lighter with a fresh strawberry or blueberry sauce.
